The Dish 
This sizzling skillet fajita recipe is just what you need when you’re craving a restaurant-style meal at home. Lean steak is simply seasoned with a taco spice blend and heartily seared before being joined by it’s fajita veggie staples: bell peppers and onions. No fajita is complete without the rice and bean sides and the typical sour cream and salsa toppings! So, we’ve got you covered.

And with only 12 ingredients, plus a cooking time of under 30 minutes, this meal qualifies as quick, easy, and delicious!  

Pantry Hacks: Short on supplies? Here are some handy hacks to help you recreate this recipe with common ingredients found right in your pantry, fridge, or freezer.

  • No steak? No problem! Feel free to use chicken breast or shrimp (or try a vegetarian option!). 

Ingredients
1 tablespoon (15ml) extra virgin olive oil 
10oz (308g) lean beef steak 
1 tablespoon (7g) taco seasoning (divided) 
1 each (150g) red bell pepper, seeded and cut into strips 
1 each (150g) green bell pepper, seeded and cut into strips
1/2 each (150g) red onion, peeled and sliced 
2 cups (400g) brown rice, cooked 
3/4 cup (220g) pinto or kidney beans, drained and rinsed 
4-8 whole wheat flour tortillas  

Serve with: 
low fat sour cream 
salsa 
hot sauce (optional)

Preparation 

  • Heat oil in a large skillet (cast-iron or stainless steel) over high heat. 
  • Season steak with half of the taco seasoning and sear in the skillet. 
  • Cook for 3-4 minutes (for medium) per side or until well seared and desired doneness is reached. Remove from the skillet and let rest for 5 minutes before slicing. 
  • Add peppers and onions to the skillet and season with remaining taco seasoning. Cook for 4-5 minutes, stirring frequently, until tender. Remove the skillet from the heat. 
  • Return the steak to the skillet and serve with rice, beans, tortillas and toppings.  

Vegetarian and Vegan Modifications:  Feel free to substitute the steak for extra firm tofu or seitan...or load up on the beans! 

Gluten Free Modifications: Replace the whole wheat tortillas with a gluten free wrap.
